To make the recipe, all you need is a large cucumber and the sushi fillings of your choice. Some tasty filling options include shredded crab, capers, avocado and carrots. Begin by peeling your cucumber and coring out the inside. Fill the cucumber rolls with your desired fillings and then top with spicy Japanese mayo or pickled ginger.

Low-Calorie Cucumber Sushi Rolls

Not only are these DIY cucumber rolls extremely easy to make, they are also a lighter option than traditional rolls. By swapping out the rice, these rolls provide a low-carb sushi alternative.

Cucumber Sushi Roll Recipe

2 cucumbers
1/2 lb tuna steak
8 shrimp
1/2 avocado
2 tbsp mayonnaise
2 tsp sriracha
1 stalk green onion
1/2 tsp sesame seeds


This recipe is for two rolls! Start by peeling your cucumber and cutting the ends off so you have a cylindrical shape of about 6-8 inches in length. Using a long, wet and sharp knife, lay the edge of it against the edge of the cucumber and begin to cut into it. Chop and mix all the ingredients, fill the cucumber rolls with your mixture, then top with spicy Japanese mayo or pickled ginger and sesame seeds.
