Enjoy this easy to make, low carb noodles version made from zucchini and a delicious Avocado Pesto.
Zucchinis are great for a healthy diet and provide health benefits, such as; they have anti-inflammatory properties, are not only low on carbs, they are also very low on calories, have plenty of Vitamin C, potassium, antioxidants and improving digestive health
Use a spiralizer or a julienne peeler to slice the zucchini into noodles. Heat the extra virgin olive oil in a large skillet over medium-high heat. Add the season with salt and pepper and saute for another 1 or 2 minutes. Remove from heat and toss the zucchini noodles with pesto until coated.

5-6 medium zucchini (2¼-2½ pounds total), trimmed
¾ teaspoon salt, divided
1 ripe avocado
1 cup packed fresh basil leaves
¼ cup unsalted shelled pistachios
2 tablespoons lemon juice
¼ teaspoon ground pepper
¼ cup extra-virgin olive oil plus 2 tablespoons, divided
3 cloves garlic, minced (as tolerated)
1 pound raw shrimp (21-25 count), peeled and deveined, tails left on if desired
1-2 teaspoons Old Bay seasoning (optional)
